Mix all the ingredients together by hand except the almonds and the chocolate. (For the bars make small size rectangles and place on a sheet pan. For the truffles scoop out little quarter size balls and place on sheet pan.)
Place the toasted almonds on top with a little bit of pressure.
Place in the refrigerator.
Using a double boiler melt your chocolate.
Careful not to overheat.
Remove the bars or truffles from the refrigerator and begin to dip one at a time and place back on the sheet pans.
Let dry and enjoy.
